Tupperware Vent N Serve Zucchini Bread

Tupperware Vent N Serve

3 eggs, beaten
1 cup vegetable oil
2 cups sugar
2 t. vanilla
3 t. cinnamon
3 cups flour
½ t. baking powder
1 t. salt
1/2 cup chopped nuts
2 cups grated zucchini

Mix eggs, oil, sugar, vanilla, and cinnamon in Large Mix-N-Store Plus Pitcher. Add dry ingredients and stir. Pour into Large Deep R-N-S container. Cook in microwave uncovered at 80% power for 20 minutes.

For individual-size breads, bake in Small R-N-S. Divide recipe into 5 equal amounts and microwave on high for 1 1/2 minutes.

For variety, you can use the following instead of zucchini: canned pumpkin, carrots, (grated), bananas, etc.
