Zucchini
and Meat Sauce Casserole
1 jar Prego spaghetti sauce
1 pound ground beef
3 zucchini
4 eggs, beaten
1 cup shredded cheddar
1 cup shredded mozzarella
Note: we almost always use ground turkey
in this recipe
Grease an 11x7 casserole dish. Grate
zucchini into a bowl. Add beaten eggs and 1 1/2 cups of the
combined cheese mixture. Mix and pour into casserole dish. Bake
for 35 minutes at 350 degrees.
In a large skillet, brown the ground
beef. When browned, drain and add spaghetti sauce. Simmer for
10 minutes. Pour over cooked zucchini. Sprinkle remaining
cheese on top and bake until cheese is melted.
