Zucchini Bread

1 1/2 cups flour
1 egg
1 cup sugar
1 cup finely shredded zucchini
1/4 cup oil
1/2 cup chopped walnuts (optional)
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon baking powder
1/4 teaspoon lemon peel

In a bowl, combine flour, cinnamon, baking soda, salt, nutmeg and baking powder. In a seperate bowl, beat together sugar, zucchini and egg. Add oil and lemon peel and mix well. Stir in the flour mixture and mix. If you are adding nuts, add them now and mix again. Pour into a greased loaf pan and bake at 350° for 55-65 minutes. Test center to see if done. Let cool completely before slicing.
