Zucchini Pie

6 cups sliced zucchini
2 cups chopped broccoli
1 large red onion, chopped
2 cups Bisquick
1 cup oil
4 tablespoons chopped parsley
8 eggs
1 cup grated parmensan cheese
salt and pepper to taste

Combine the vegetables and mix. Add the remaining ingredients and mix. Pour into a casserole dish and bake 1 hour at 350 degrees. Cool for 30 minutes.
