Carrot Muffins Recipe

Ingredients

  • 4 carrots grated
  • 1 1/2 cups milk
  • 1/4 cup orange juice
  • 2 eggs beaten
  • 2 cups flour
  • 2 cups cornmeal
  • 3 teaspoons baking powder
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 4 tablespoons butter melted

Instructions

  1. Preheat oven to 325 degrees.

  2. In large bowl combine carrots, milk, orange juice and eggs.

  3. In separate bowl sift together the flour, cornmeal, baking powder, sugar and salt.

  4. Slowly stir the flour mixture into the carrot mixture.

  5. Add melted butter.

  6. Pour into greased muffin tins and bake for 25-30 minutes.
