Apple Nut Bread Recipe

Ingredients

  • 1 cup sweetened applesauce
  • 1/2 cup carrots shredded
  • 1/2 cup corn oil
  • 1 teaspoon vanilla
  • 2 eggs beaten
  • 3/4 cup sugar
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup walnuts chopped
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Grease and flour a loaf pan.

  2. Mix together the applesauce, carrots, corn oil, vanilla, eggs and 3/4 cup sugar.

  3. In a separate bowl, mix together the flour, baking powder, baking soda, salt, 1 teaspoon cinnamon, nutmeg and walnuts.

  4. Add the dry mixture to the applesauce mixture and mix just until blended. Pour into loaf pan.

  5. Mix the 1 tablespoon sugar and 1/2 teaspoon cinnamon together and sprinkle on top of the batter.

  6. Bake one hour at 325 degrees.

  7. Center should be cooked through.

  8. Remove from pan and cool on rack.
