Pumpkin Cornbread Recipe

Ingredients

  • 1 1/2 cups cornmeal
  • 1 1/2 cups milk
  • 3/4 cup canned pure pumpkin
  • 1/2 cup whole wheat flour
  • 3 tablespoons vegetable oil
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 egg

Instructions

  1. Sift the dry ingredients together.

  2. Beat the egg. 

  3. Stir the egg, oil, pumpkin and milk into the dry ingredients quickly, leaving a few lumps.

  4. Pour into a greased 8-inch square pan.

  5. Bake at 350 degrees for 30 to 35 minutes,

  6. Cool for 10 minutes.

  7. Cut into squares.
