Carrot and Orange Soup Recipe


  • 2 cups broth If you want your soup to be vegetarian use vegetable broth. Otherwise use a clear chicken broth
  • 1 pound carrots, grated
  • 1 small onion, chopped
  • 1 stalk of celery, chopped
  • 1 medium potato, chopped
  • 1/2 cup orange juice
  • 1 orange rind, grated


  1. Pour broth into a soup pot. Simmer the vegetables in the broth until the vegetable are tender, 30-45 minutes. 

  2. Remove from stove and add orange juice and orange rind. 

  3. Put the soup through the blender or food processor until smooth.
