Chicken Artichoke Casserole Recipe

Ingredients

  • 3 pounds cut-up chicken
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 6 tablespoons butter
  • 1 can whole mushrooms
  • 2 tablespoons flour
  • 2/3 cup chicken consomme
  • 3 tablespoons sherry wine
  • 1 15 oz can artichoke hearts

Instructions

  1. Season chicken pieces with salt, pepper and paprika.

  2. Brown chicken in 4 tablespoons butter.

  3. Transfer chicken to casserole dish.

  4. Add remaining butter to skillet and saute mushrooms for 4 minutes.

  5. Sprinkle with flour and add consomme and sherry.

  6. Cook 5 minutes longer.

  7. Arrange artichoke hearts between chicken pieces.

  8. Pour sauce over the casserole and bake at 375 degrees for one hour.
