Spinach and Cottage Cheese Casserole Recipe
- 1 package frozen spinach thawed (do not drain)
- 32 ounces cottage cheese
- 8 ounces grated cheddar cheese
- 1/4 pound butter softened
- 6 eggs
- 6 tablespoons flour
Place the cottage cheese into a bowl.
Add the eggs, unbeaten. Mix and then add the cheddar cheese and butter.
Mix again and then add flour. Mix again and finally fold in spinach.
Mix and pour into casserole dish.
Bake about one hour at 350 degrees.
Note: use non fat cottage cheese and a mixture of 3 real eggs and the equivalent of 3 eggs with an egg substitute for a much healthier version of the recipe.
