Onion Stuffed Steak Recipe

Ingredients

  • 2 pounds steak, cut 1 1/2 inches thick
  • 1 cup sliced fresh mushrooms
  • 1/2 cup chopped onion
  • 1/4 cup dry red wine
  • 1 garlic clove minced
  • 3 tablespoons butter
  • 2 tablespoons soy sauce
  • 1 green onion diced
  • dash of celery salt
  • dash of pepper

Instructions

  1. Slash fat edges of steak. Slice pockets in each side, cutting almost to bone.

  2. In a frying pan, cook chopped onion and garlic in 1 tablespoon of butter. 

  3.  Add celery salt and pepper. Stuff pockets with onion mixture.

  4. Mix wine and soy sauce; brush on steak.

  5. Grill with hood closed 15 minutes, basting often.

  6. Turn steak; grill 10 to 15 minutes longer. If you prefer your meat a bit more done add a few minutes cooking time to each side. Baste often.

  7. Cook mushrooms and green onions in 2 tablespoons of butter until tender; spoon over steaks.

Beef Fillets with Mushroom Sauce Recipe

Ingredients

  • 6 6 oz beef tenderloin fillets
  • 2 teaspoons chopped fresh tarragon
  • 1/2 teaspoon freshly ground pepper
  • 5 tablespoons butter or margarine, divided
  • 8 ounces portobello mushroom caps, sliced
  • 1/3 cup dry red wine or beef broth
  • 1/2 cup sour cream
  • 3 ounces Stilton or blue cheese, crumbled and divided
  • garnish: fresh tarragon sprigs.

Instructions

  1. Rub fillets with tarragon and pepper. Melt 2 tablespoons butter in a large skillet over medium-high heat. Cook fillets 4 to 5 minutes on each side or to desired degree of doneness. Remove from skillet, and keep warm.

  2. Melt remaining 3 tablespoons butter in skillet. Add mushrooms and sauté 3 to 4 minutes or until tender. Add wine (or beef broth) and cook 1 to 2 minutes, stirring to loosen particles from bottom of skillet. Stir in sour cream. Sprinkle 1/4 cup cheese into sauce, stirring until melted.

  3. Arrange fillets on a serving platter, and drizzle with sauce. Sprinkle with remaining cheese, and garnish, if desired.

Italian Meat Loaf Recipe

Italian Meat Loaf Recipe

Ingredients

  • 1 1/2 pounds ground beef
  • 1 cup bread crumbs
  • 1 package spaghetti sauce mixq
  • 1 8 oz can tomato sauce
  • 2 eggs beaten
  • 1 teaspoon seasoned salt

Instructions

  1. Place bread crumbs, spaghetti sauce mix and 3/4 cup of the tomato sauce in a mixing bowl. Stir lightly.

  2. Add beaten eggs, meat and seasoned salt. Mix lightly with fork.

  3. Shape into a loaf and place in loaf pan. Brush with remaining tomato sauce. Bake at 350° for an hour.

  4. Allow to stand for 5-10 minutes before slicing.

Beef Stroganoff Recipe

Ingredients

  • 2 pounds beef tenderloin or sirloin tip
  • 1/4 cup flour
  • 1 1/2 teaspoon salt
  • 1/3 teaspoon pepper
  • 2/3 cup butter or margarine
  • 1 cup minced onion
  • 1 pound sliced mushrooms
  • 1 1/3 cup beef bouillon
  • 2/3 cup red wine
  • 1 teaspoon worcestershire sauce
  • 1 1/3 cup sour cream

Instructions

  1. Cut beef strips 1 1/2" x 1 1/4". 

  2. Mix flour, salt and pepper. Coat beef with flour mixture. 

  3. Melt 1/3 of the butter in a large pan. 

  4. Add onions and saute until golden. Remove and set aside. 

  5. Melt 1/3 more of the butter; add mushrooms and sute 5 minutes. Remove and set aside. 

  6. Brown meat strips in remaining butter; add the bouillon, wine and onions.

  7. Stir to dissolve bits on pan bottom. Simmer 20 minutes or utnil the meat is tender and mixture is thickened. 

  8. Add Worcestershire sauce, sour cream and mushrooms. Heat gently. Serve over rice or noodles.

Meat Loaf with Provolone Recipe

Ingredients

  • 1 pound ground beef
  • 1 cup hot water
  • 1 cup seasoned bread crumbs
  • 1 cup ketchup, divided in half
  • 1 cup fine chopped onion
  • 1 cup chopped fresh basil leaves
  • 1/2 cup sun dried tomatoes
  • 1/2 cup shredded provolone cheese
  • 2 eggs beaten
  • 2 tablespoons minced garlic

Instructions

  1. Place the sun dried tomatoes in hot water. Allow to stand about 30 minutes.

  2. Tomatoes should be soft. Chop finely. Combine 1/2 cup ketchup, bread crumbs, onion, basil, cheese, eggs, garlic and meat in bowl and mix well.

  3. Shape into loaf and place in pan.

  4. Spread remaining ketchup over the top and bake at 350 degrees about an hour.

  5. Meat should be done in the center.

Pizza Burgers Recipe

Ingredients

  • 2 pounds ground beef
  • 1/2 cup minced onion
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper
  • 8 ounces pizza sauce
  • 6 slices of cheese
  • 3 large english muffins, split

Instructions

  1. Mix together the ground beef, onion, salt, oregano, pepper and 1/2 of the pizza sauce.

  2. Shape into 6 patties. Broil until done. Spoon remaining sauce on top and top with slice of cheese. 

  3. Return to broiler to melt cheese. Serve on toasted muffin half.

Barbeque Beef Kabobs Recipe

Ingredients

  • 1 pound sirloin, cut into 1 inch cubes
  • bite sized onion and bell pepper pieces
  • cherry tomatoes
  • 1 cup italian salad dressing
  • 2 cups finely crushed barbeque potato chips or barbeque corn chips

Instructions

  1. Marinate meat overnight in salad dressing.

  2. Put meat and vegetables on skewers and then roll the skewers in the crushed chips.
