Quick Lasagna Recipe

Ingredients

  • 1 lb wide noodles
  • 2 tbsp olive oil
  • 1 lb ground beef
  • 1 lb creamed cottage cheese
  • 3 cans spaghetti sacue with mushrooms
  • 4 tbsp grated parmesan cheese

Instructions

  1. Boil noodles according to package directions

  2. Brown beef in oil

  3. Drain off fat

  4. In a casserole dish, layer beef, noodles, cottage cheese and sauce

  5. Top with sauce and grated parmesan cheese

  6. Bake at 375° for 20 minutes

Chinese Style Chicken Recipe

Chinese Style Chicken Recipe

Ingredients

  • 1 7 oz package frozen pea pods
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 2 large chicken breasts skinned and boned
  • 3 tablespoons vegetable oil
  • 3 scallions diagonally sliced 1/4 inch
  • 2 stalks celery diagonally sliced 1/2 inch
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1 tablespoon soy sauce
  • 2 tablespoons cornstarch
  • 1 10 oz can condensed chicken broth undiluted
  • 1 4 oz can sliced mushrooms drained
  • chow mein noodles (optional)

Instructions

  1. Place unopened package of pea pods in a large bowl of very hot water to thaw.

  2. In a medium sized bowl; mix the 2 tablespoons cornstarch and salt.

  3. Slice chicken into 1/2 inch slices.

  4. Place chicken in bowl with the cornstarch mixtures and toss lightly to coat pieces well.

  5. Pour oil into a large skillet and heat over medium high heat.

  6. Add chicken pieces and cook 3 minutes until lightly browned, turning occasionally.

  7. Remove chicken with a slotted spoon.

  8. Add scallions, celery, garlic powder and ginger to pan and cook about 1 minute stirring occasionally.

  9. In a small bowl mix soy sauce, the 2 tablespoons cornstarch and 2 tablespoons of the chicken broth.

  10. Pour remaining chicken broth into pan.

  11. Gradually add soy sauce mixture and stirring constantly, cook over medium heat until mixture is thickened.

  12. Stir in mushrooms and pea pods and cook one minute.

  13. Stir in chicken and cook a few minutes until everything is hot and mixed.

  14. Add chow mein noodles if desired.

  15. Serve over hot steamed rice.

  16. You can add almonds or cashews for additional flavor.

Chicken Enchilada Casserole Recipe

Chicken Enchilada Casserole Recipe

Ingredients

  • 3 pounds chicken, white or dark meat
  • 6 tortillas, cut into bite sized pieces
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 1 small can ortega diced chiles (chop pieces even smaller)
  • 1 can sliced black olives
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream

Instructions

  1. Cook chicken and then cut into bite sized pieces.

  2. Mix the two cans of soup in a bowl.

  3. Add the olive and sour cream.

  4. In a casserole dish arrange the ingredients in the following order: 

    -soup mixture

    -tortillas

    -chicken

    -chile pieces

    -cheese

  5. Repeat layering one more time.

  6. Top with a bit of the soup mix and cheese.

  7. Bake for 20-30 minutes at 350 degrees.

Potato Kugel Recipe

Potato Kugel Recipe

Ingredients

  • 4 pounds potatoes
  • 1 large onion
  • 2 large eggs whisked
  • 1 teaspoon salt
  • 6 tablespoons melted butter
  • 2 tablespoons flour or matzah meal

Instructions

  1. Grate the potatoes and onion into a large bowl.

  2. Drain the excess water.

  3. In a separate bowl, mix the salt, butter, flour and the whisked eggs.

  4. Pour into potato and onion mixture and mix well.

  5. Grease a 9x13 baking dish. Pour mixture into dish.

  6. Bake at 400 degrees for 15 minutes.

  7. Reduce oven to 375 degrees and bake an additional 45 minutes.

  8. If you are serving this to guests, try using a muffin pan and making individual servings.

  9. Adjust the cooking time for the smaller servings.

Chinese Pepper Steak Recipe

Chinese Pepper Steak Recipe

Ingredients

  • 1 1/2 or 2 pounds top sirloin
  • 2 large green peppers
  • 2 large onions
  • 1 teaspoon cornstarch diluted in 1/4 cup cold water
  • 1 can sliced water chestnuts
  • 1 clove garlic smashed
  • 1/4 cup oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup soy sauce
  • 1/2 cup beef bouillon
  • 1/2 teaspoon sugar
  • 1 teaspoon ginger

Instructions

  1. Freeze meat for about an hour to make it hard, but not frozen.

  2. Slice meat into 1/8" strips.

  3. Put oil in frying pan.

  4. Add garlic, ginger, salt and pepper.

  5. Fry until garlic is golden brown.

  6. Add meat and saute until brown.

  7. Remove meat.

  8. Place bell pepper and onion slices into frying pan.

  9. Saute, but do not overcook.

  10. Add meat again, along with bouillon, soy sauce, sugar, water chestnuts and cornstarch mixture.

  11. Cook until sauce thickens, Serve over white rice.

Fish Balls or Mock Gefilte Fish Recipe

Ingredients

  • 3 eggs
  • 1 small can chunk style, light meat tuna
  • 1/2 teaspoon salt
  • 1/2 cup saltine crackers
  • 1 tablespoon saltine crackers
  • 1 teaspoon onion powder or 1 teaspoon minced onion
  • 1/8 teaspoon pepper

To Boil in the Pot

  • 2 medium onions
  • 2 carrots
  • 1/2 teaspoon salt
  • dash of white pepper
  • 3 cups water

Instructions

  1. Beat eggs in a bowl.

  2. Add tuna and mix well.

  3. Add 1/2 teaspoon salt, the crackers, the onion powder and the 1/8 teaspoon pepper. Mix very well.

  4. Cover and put in refrigerator at least 4 hours.

  5. In a large roomy pot, slice the carrots and onions.

  6. Add water, 1/2 teaspoon salt and dash of pepper.

  7. Bring to a boil.

  8. When almost boiled, make fish balls and add them. Cover tightly.

  9. Lower flame and cook about 45 minutes. Uncover and cook another 45 minutes. Refrigerate.
