Apricot Nut Bread Recipe

Apricot Nut Bread Recipe

Ingredients

  • 1 1/3 cups dried apricots cut into small pieces
  • 1 3/4 cups sugar
  • 3 tablespoons softened butter
  • 2 eggs beaten
  • 1/3 cup water
  • 3/4 cup orange juice
  • 3 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup nuts chopped

Instructions

  1. Soak apricots in warm water for 2-3 hours. Drain well.

  2. Mix together sugar, butter, eggs, water and orange juice.

  3. SIft dry ingredients into a bowl and then add to sugar mixture.

  4. Mix thoroughly.

  5. Fold in apricots and nuts.

  6. Pour into loaf pan and bake at 350 degrees for 55 minutes.

Pineapple Biscuits Recipe

Pineapple Biscuits Recipe

Ingredients

  • 1/2 cup packed brown sugar
  • 1/4 cup butter or margarine softened
  • 1 8 oz can crushed pineapple drained
  • 1 teaspoon cinnamon
  • 1 can refrigerated biscuits

Instructions

  1. Grease 10 muffin cups.

  2. In a bowl, combine brown sugar and butter.

  3. Stir in pineapple and cinnamon.

  4. Spoon into prepared muffin cups.

  5. Place one biscuit on top of each muffin slot.

  6. Bake for 10 minutes at 425 degrees or until golden brown.

  7. Let stand for 5 minutes before inverting onto a serving platter.

Orange Biscuits Recipe

Orange Biscuits Recipe

Ingredients

  • 3 cups flour
  • 1 cup milk
  • 4 tablespoons shortening
  • 3 tablespoons sugar
  • 2 tablespoons butter melted
  • 1 orange
  • 4 teaspoons baking powder
  • 1 teaspoon salt

Instructions

  1. Stir flour, measure, and sift with baking powder, salt and 1 tablespoon of the sugar.

  2. Cut in shortening.

  3. Add milk to form soft dough.

  4. Turn onto lightly floured board.

  5. Knead lightly.

  6. Pat into sheet 1/2 inch thick.

  7. Spread with butter, and 2 tablespoons sugar dissolved in orange juice.

  8. Sprinkle with grated orange rind.

  9. Roll like jelly roll and cut in slices 1/2 inch thick. 

  10. Place cut side down in well-oiled pan.

  11. Cover and allow to stand 10 minutes.

  12. Bake at 450 degrees about 15 minutes.

Cherry Muffins Recipe

Cherry Muffins Recipe

Ingredients

  • 1/2 cup sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 small jar, about 1/2 cup maraschino cherries with liquid
  • 2 eggs
  • 3 tablespoons butter
  • 1 cup milk
  • 1 1/2 cup flour

Instructions

  1. Stir together dry ingredients.

  2. Add the cherries.

  3. Mix eggs, cherry liquid & melted butter.

  4. Add the dry mix to the wet mix until just combined.

  5. Bake for 15-20 minutes at 375 degrees.

  6. Note: add one teaspoon almond extract for a great cherry - almond taste

Banana Muffins Recipe

Banana Muffins Recipe

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large ripe bananas mashed
  • 3/4 cup sugar granulated
  • 1 egg lightly beaten
  • 1/3 cup butter melted

Topping

  • 1/3 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon butter

Instructions

  1. In a large bowl, combine dry ingredients.

  2. Combine bananas, sugar, egg and butter, mix well.

  3. Stir into dry ingredients just until moistened.

  4. Fill greased or paper lined muffin pan.

  5. Combine topping ingredients; sprinkle over muffins.

  6. Bake at 375 degrees for 20-25 minutes or until muffins test done.

  7. Cool 10 minutes before removing to a wire rack.

Blue Cheese Biscuits Recipe

Ingredients

  • 1 package refrigerated buttermilk biscuits (10 per can)
  • 1/4 cup butter
  • 3 tablespoons blue cheese crumbled

Instructions

  1. Cut biscuits in quarters.

  2. Arrange flat in baking pan.

  3. Melt butter and cheese.

  4. Pour over biscuits.

  5. Bake at 400 degrees about 8 minutes or until golden.

Pineapple Nut Bread Recipe

Pineapple Nut Bread Recipe

Ingredients

  • 2 1/2 cups sifted flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter softened
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 tablespoon lemon juice
  • 2 cups pineapple with juice crushed
  • 1/2 cup nuts chopped

Instructions

  1. Sift together flour, baking powder, baking soda, salt and cinnamon.

  2. Cream together the butter and sugar.

  3. Beat in eggs.

  4. Stir in lemon juice, pineapple, pineapple juice and nuts. Mix well.

  5. Pour in sifted dry ingredients and mix until moistened.

  6. Pour into a greased loaf pan and bake at 375 degrees for one hour.

Cranberry Apple Muffins Recipe

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 eggs
  • 3/4 cup dark brown sugar
  • 1/4 cup oil
  • 1 teaspoon vanilla
  • 3/4 cup diced cranberries
  • 3/4 cup diced apples

Instructions

  1. Preheat oven to 350 degrees.

  2. Grease and flour muffin pans.

  3. In a medium bowl, combine flours, baking soda, cinnamon, and salt.

  4. In a separate bowl, whisk together the eggs and sugar.

  5. Add oil and vanilla.

  6. Stir in fruits. Fold in dry ingredients mixing until just moistened.

  7. Pour into prepared pans.

  8. Bake large muffins 25 to 30 minutes or miniature muffins about 20 minutes.

  9. Note: If you like nuts, add 1/2 cup nuts when you add the fruits.

Orange Cinnamon Bread Recipe

Orange Cinnamon Bread Recipe

Ingredients

  • 3 cups white bread flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons granulated sugar
  • 3/4 teaspoon salt
  • 2 1/2 teaspoons active dry yeast
  • 1 teaspoon grated orange peel
  • 2 tablespoons butter

Instructions

  1. Place ingredients in the bread machine pan in the order suggested by the manufacturer.
  2. Select sweet bread cycle and light crust; start machine.

  3. Makes one (1 1/2 pound) loaf.

Ingredients

  • 6 ounces pitted dates
  • 1 cup boiling water
  • 1 tablespoon shortening
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Instructions

  1. Pour the boiling water over the dates and allow to stand.

  2. Cream together the shortening and sugar.

  3. Add the egg and blend thoroughly.

  4. Add vanilla and the remaining ingredients, mix well.

  5. Add the dates and the water and mix again.

  6. Bake at 350 degrees for 55-60 minutes.
