Chicken Artichoke Casserole Recipe
- 3 pounds cut-up chicken
- 1 1/2 teaspoons salt
- 1/2 teaspoon paprika
- 1/4 teaspoon pepper
- 6 tablespoons butter
- 1 can whole mushrooms
- 2 tablespoons flour
- 2/3 cup chicken consomme
- 3 tablespoons sherry wine
- 1 15 oz can artichoke hearts
Season chicken pieces with salt, pepper and paprika.
Brown chicken in 4 tablespoons butter.
Transfer chicken to casserole dish.
Add remaining butter to skillet and saute mushrooms for 4 minutes.
Sprinkle with flour and add consomme and sherry.
Cook 5 minutes longer.
Arrange artichoke hearts between chicken pieces.
Pour sauce over the casserole and bake at 375 degrees for one hour.
