Sour Cream Coffee Cake Recipe

Ingredients

  • 2 cups flour
  • 1 cup white sugar
  • 1 cup sour cream
  • 2 eggs
  • 1/2 cup nuts chopped (optional)
  • 1/2 cup butter
  • 1/4 cup brown sugar packed
  • 1 apple peeled and chopped
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt

Instructions

  1. Sift together the flour, baking soda, baking powder and salt.

  2. In a separate large bowl, cream together the butter and white sugar.

  3. Add the eggs and vanilla and mix well.

  4. In your butter and sugar bowl, alternately add the flour mixture and the sour cream; beating well after each addition

  5. In a separate bowl, mix together the nuts, cinnamon, brown sugar and apple pieces.

  6. Pour half the batter into a bundt pan.

  7. Then pour in half the apple mixture.

  8. Pour in the remaining batter and top with the apple mixture.

  9. Bake at 350 degrees for 45 minutes or until done.

Apple Crisp Pancake Recipe

Apple Crisp Pancake Recipe

Ingredients

  • 1 egg beaten
  • 3/4 cup milk
  • 3/4 cup chunky applesauce
  • 1 teaspoon vanilla
  • 2 cups pancake mix

Topping:

  • 1/2 cup quick oats
  • 1/4 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup pancake mix
  • 3 tablespoons butter

Instructions

  1. Spray a jelly roll pan with cooking spray.

  2. In a large bowl, combine egg, milk, applesauce, vanilla and pancake mix.

  3. Spread the mixture in the prepared pan.

  4. In a medium bowl, combine the oats, brown sugar, pancake mix and butter.

  5. Sprinkle the topping over the pancake batter.

  6. Bake at 375 degrees for 14-16 minutes.

Breakfast Sandwich Recipe

Breakfast Sandwich Recipe

Ingredients

  • 6 eggs scrambled
  • 8 slices canadian bacon
  • 8 slices cooked bacon
  • 4 slices swiss cheese
  • 4 slices cheddar cheese
  • 8 slices thick bread
  • 2 eggs
  • 2 tablespoons water

Instructions

  1. Mix 2 eggs in shallow dish.

  2. Coat a frying pan with cooking spray.

  3. Dip bread in egg and place in skillet.

  4. Cook 2 pieces of bread at a time.

  5. Place one slice of cheddar cheese on one piece of bread and one slice of swiss cheese on the other piece of bread.

  6. Warm one slice of each meat and place on top of swiss cheese. 

  7. Place 1/4 of the scrambles egg on the swiss cheese half.

  8. Make a sandwich and serve.

Cornbread Quiche Recipe

Cornbread Quiche Recipe

Ingredients

  • 1 can refrigerated cornbread twists
  • 1 10 ounce can asparagus spears drained
  • 1 2 ounce jar diced pimientos drained
  • 5 eggs
  • 1 cup half and half
  • 1 cup shredded swiss cheese
  • 2 ounces shredded cheddar cheese
  • 1/4 cup sliced green onions
  • 1 teaspoon dry mustard
  • 1/4 teaspoon ginger
  • 1/4 teaspoon red pepper flakes crushed

Instructions

  1. Unroll dough into a rectangle.

  2. Place in ungreased casserole dish (13x9).

  3. Press into bottom and up about one inch on the sides.

  4. Make sure preforations and pressed shut.

  5. Bake for 5 minutes at 375 degrees.

  6. Remove from oven.

  7. Evenly spoon both the pimientos and onion evenly over the crust (crust will look undercooked).

  8. In a small bowl, combine the remaining ingredients, except the cheeses. Mix well.

  9. Pour this mixture over the pimientos and onions.

  10. Sprinkle both cheeses over the top, distributing evenly.

  11. Bake for 20-30 minutes at 375 degrees.

  12. Cut into squares.

Apple Cinnamon Coffee Cake Recipe

Apple Cinnamon Coffee Cake Recipe

Ingredients

  • 4 large apples peeled and sliced
  • 4 eggs
  • 3 cups flour
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1/4 cup orange juice
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 5 tablespoons sugar
  • 2 teaspoons cinnamon

Instructions

  1. In a bowl, mix together the flour, baking powder, 2 cups sugar and salt.

  2. Add the oil, orange juice, eggs and vanilla and beat until mixed.

  3. In a separate bowl combine the 5 tablespoons sugar and cinnamon and  mix.

  4. Layer the batter, apples and cinnamon mixture 1/2 at a time in a greased and floured bundt pan.

  5. Bake at 350 degrees for 1 1/4 hours or until a toothpick inserted in the center comes out clean.

Cinnamon French Toast Recipe

Cinnamon French Toast Recipe

Ingredients

  • 1 loaf cinnamon bread thick sliced
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon vanilla
  • salt to taste
  • oil for frying
  • confectioners' sugar to dust the bread

Instructions

  1. Beat the eggs in a bowl.

  2. Add the milk, flour, baking powder, salt, vanilla and cinnamon. Mix well.

  3. Coat the pan with oil to prepare for frying.

  4. Dip the bread slices in the batter coating both sides.

  5. Fry, turning until both sides are golden brown.

  6. Dush with confectioners sugar.

Breakfast Pizza Recipe


Ingredients

  • 1/2 pound sausage (or other breakfast meat)
  • 1 package cresent rolls
  • 1 1/2 cup frozen hashbrowns thawed and crumpled
  • 1 cup cheddar cheese shredded
  • 7 eggs beaten
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons grated parmesan cheese

Instructions

  1. Cook sausage, or other meat, drain.

  2. Spread the crescent roll dough out on 12" greased pizza pan pinching edges together.

  3. Spoon in sausage over the dough.

  4. Sprinkle with hashbrowns.

  5. In a bowl, combine eggs, milk, salt and pepper and pour over sausage and hashbrowns.

  6. Sprinkle with cheeses.

  7. Cook at 350 degrees for 22-25 minutes.

Baked French Toast Recipe

Baked French Toast Recipe

Ingredients

  • 1/2 cups cubed bread cut bread into one inch cubes
  • 8 eggs
  • 3 cups half and half
  • 3/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla

Instructions

  1. Spray a 13x9 casserole dish. Place bread cubes on bottom.

  2. In a large bowl, beat eggs, half and half, sugar, cinnamon, salt and vanilla.

  3. Pour over bread cubes. Refrigerate at least 4 hours, or overnight.

  4. Heat oven to 400 degrees. Bake, uncovered 25 to 35 minutes. Should be golden brown.

  5. You can top this with maple syrup, fresh fruit, jam or fruit sauces.

Brunch Casserole Recipe

Brunch Casserole Recipe

Ingredients

  • 6 slices white bread crusts removed
  • 2 cups jack cheese
  • 4 ounce can diced green chiles
  • diced ham
  • 6 eggs beaten
  • 2 cup milk
  • 1/4 cup garlic
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/4 teaspoon dry mustard

Instructions

  1. Butter bread.

  2. Place bread, butter side down in casserole dish.

  3. Pour cheese and diced ham over bread.

  4. Spread the chilies evenly over the ham and cheese.

  5. Mix all ingredients together and pour over casserole.

  6. Refrigerate over night.

  7. Bake uncovered at 325 degrees for 50 minutes.

  8. Allow to stand 10 minutes before serving.

Banana Walnut French Toast Recipe

Banana Walnut French Toast Recipe

Ingredients

  • 6 eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 4 very ripe bananas
  • 1/4 cup walnuts coarsely chopped
  • 1/8 teaspoon nutmeg
  • 8 slices challah bread

Instructions

  1. In a large shallow bowl, beat the eggs until lightly frothy (use a fork).

  2. Stir in the milk and set aside. 

  3. Peel the bananas into a small bowl and mash them with a fork.

  4. Stir in the walnuts and the nutmeg.

  5. Spread the banana mixture over 4 of the bread slices, leaving a 1/4-inch border uncovered on all edges.

  6. Top with the remaining bread slices and press down gently to seal.

  7. Place 2 sandwiches in the egg mixture and press down gently.

  8. Turn over and let soak for a moment until evenly saturated on both sides.

  9. Repeat with the other 2 remaining sandwiches.

  10. In a frying pan melt butter over medium heat.

  11. Place the sandwiches in pan or on griddle and fry until the undersides are golden brown, about 2 minutes.

  12. Flip the sandwiches with a spatula, adding more butter to the pan if needed, and fry until golden brown.

  13. To serve place the toast on plates and dust with powdered sugar. Serve with maple syrup or jam.
