Zucchini Pie Recipe

Ingredients

  • 6 cups sliced zucchini
  • 2 cups chopped broccoli
  • 1 large red onion, chopped
  • 2 cups Bisquick
  • 1 cup oil
  • 4 tablespoons chopped parsley
  • 8 eggs
  • 1 cup grated parmesan cheese
  • salt and pepper to taste

Instructions

  1. Combine the vegetables and mix. Add the remaining ingredients and mix.

  2. Pour into a casserole dish and bake 1 hour at 350 degrees. Cool for 30 minutes.

Easy Quiche Recipe

Easy Quiche Recipe

Ingredients

  • 3/4 cup shredded cheddar cheese
  • 1/2 cup shredded monterey jack cheese
  • 1 cup half and half
  • 3 eggs
  • 1 4 oz can diced green chiles
  • 1 2 oz can sliced black olives
  • 2 tablespoons chopped green onions
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pastry shell

Instructions

  1. Mix the two cheeses together and spread on the bottom of the pastry shell. 

  2. In a bowl mix together the remaining ingredients. 

  3. Pour over cheese. Bake for 40 minutes at 350 degrees.

Vegetable Rice Pizza Recipe

Ingredients

  • 2 cups cooked brown or white rice
  • 1 egg, beaten
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup tomato sauce
  • 1 teaspoon italian seasoning
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated parmesan cheese
  • 1 cup grated mozzarella cheese
  • 1/3 cup sliced fresh mushrooms
  • 1/3 cup thinly sliced zucchini
  • 1/4 cup sliced ripe olives
  • 1/4 cup diced red pepper
  • 1 tablespoons chopped fresh parsley

Instructions

  1. In small bowl, combine rice, egg and cheddar cheese. Press into well greased 12-inch pizza pan. Bake at 200 degrees for 5 to 10 minutes, or until crust is lightly golden.

  2. In another small bowl, combine tomato sauce, Italian seasoning, garlic powder and black pepper; spread over crust. Sprinkle with Parmesan cheese.

  3. Layer 1/2 the mozzarella cheese, mushrooms, zucchini, olives and red pepper. Top with remaining mozzarella cheese and parsley. Bake 8 to 10 minutes longer or until vegetables are tender crisp and cheese is melted.

Stuffed Green Peppers Recipe

Ingredients

  • 3 large green peppers
  • salt
  • pepper
  • 8 ounces firm tofu, drained and finely chopped
  • 1/4 cup sliced green onions
  • 1/4 cup chopped celery
  • 1/4 cup chopped radishes
  • 1 clove garlic, minced
  • 1 tablespoon butter or margarine
  • 2 cups cooked rice
  • 1 1/2 cups (6 ounces) grated cheddar cheese, divided
  • 1/4 teaspoon ground black pepper

Instructions

  1. Cut peppers in half lengthwise; discard seeds and membranes. Cook in boiling salted water for 5 minutes; drain. Arrange cut side up in 12x8x2-inch baking dish; sprinkle with salt. 

  2. Cook tofu, vegetables and garlic in butter in large skillet until vegetables are tender crisp. Toss with rice, 1 cup cheese, 1 teaspoon salt and pepper. 

  3. Fill each pepper half with 2/3 cup mixture. Bake, covered, at 350 degrees F. 25 minutes. Sprinkle remaining 1/2 cup cheese over cups. Bake 5 minutes, or until cheese is melted.

Vegetarian Corn Dog Casserole Recipe

Vegetarian Corn Dog Casserole Recipe

Ingredients

  • 2 tablespoons butter
  • 2 cups thinly sliced celery
  • 1 1/2 cups sliced green onion
  • 1 1/2 pounds vegetarian hot dogs
  • 2 eggs, beaten
  • 1 1/2 cups milk
  • 2 teaspoons rubbed sage
  • 1/4 teaspoon ground black pepper
  • 2 8.5 ounce packages dry corn bread mix
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat oven to 400 degrees. Grease a shallow 3 quart baking dish. In a large skillet over medium heat, melt butter, then saute celery for 5 minutes. Stir in green onions, and saute an additional 5 minutes. Place in a large bowl and set aside.

  2. Cut hot dogs lengthwise into quarters, then cut into thirds. In the same skillet, saute hot dogs for 5 minutes, until lightly browned. Mix hot dogs into celery and onions. Set aside 1 cup of this mixture.

  3. In a medium bowl, combine eggs, milk, sage, pepper, and corn bread mix. Stir well to combine, then stir into remaining hot dog mixture. Mix in 1 1/2 cups cheese. Spread mixture into prepared baking dish. Top with reserved hot dog mixture and remaining 1/2 cup cheese.

  4. Bake uncovered in preheated oven for 30 minutes, until golden brown.
