Italian Potato Casserole Recipe

Italian Potato Casserole Recipe

Ingredients

  • 1 pound potatoes, peeled
  • 4 tablespoons olive oil
  • 1 onion, thinly sliced
  • 2 teaspoons chopped garlic
  • 1 cup pitted green olives
  • 1 pound canned chopped tomatoes
  • 1 tablespoon chopped fresh majoram
  • salt and pepper to taste

Instructions

  1. Cut the potatoes into 1-2 inch chunks. Heat the oil over a low heat.

  2. Turn heat up to medium and add the potatoes, onion, garlic and olive. Cook about 3 minutes.

  3. Stir in the tomatoes, marjoram, salt and pepper. Reduce heat to low and cook about 30 minutes. Potatoes should be tender.

Sweet Potato and Spice Casserole Recipe

Sweet Potato and Spice Casserole Recipe

Ingredients

  • 2 cups cooked and mashed sweet potatoes
  • 3 eggs, beaten
  • 1 cup warm milk
  • 1/2 cup ricotta cheese
  • 1 1/4 cups roasted sunflower seeds
  • 1 1/2 teaspoon cinnamon
  • 3/4 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 2 tablespoons honey

Instructions

  1. Beat eggs and milk together. Stir into mashed sweet potatoes. Blend well. 

  2. Mash the mass of ricotta cheese. Stir in seeds and spices. 

  3. Add this mixture to the yams and blend. Add honey.

  4. Pour into greased casserole dish and bake at 350° for 25 minutes.

Zucchini Casserole Recipe

Zucchini Casserole Recipe

Ingredients

  • 1 large sliced zucchini
  • 1 package shredded cheddar cheese
  • 1 egg, beaten
  • salt and pepper to taste
  • cracker crumbs
  • onion flakes to taste

Instructions

  1. Slice zucchini and cook until almost done. Cool. 

  2. Beat egg and add cheese, salt, pepper and onion flakes. Mix. 

  3. Pour into small casserole dish. Sprinkle with cracker crumbs. Bake at 400° for 20 minutes.

Onion Pie Recipe

Onion Pie Recipe

Ingredients

  • unbaked pie shell
  • 2 cups sliced onions
  • 1 cup milk
  • 1/2 cup butter
  • 3 eggs, well beaten
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Cook pie crust for 10 minutes. Saute the onions in butter until they are light brown in color.

  2. Add the salt, pepper and flour. Mix. Remove from heat and add milk and eggs. Pour into pie shell.

  3. Cook for 10 minutes in preheated 450 degree oven. Reduce to 300 degrees and bake 40 minutes until set and firm.

Rice and Zucchini Casserole Recipe

Rice and Zucchini Casserole Recipe

Ingredients

  • 1 cup long grain rice, cooked according to package directions
  • 3 medium zucchini, sliced thin
  • 1 7 ounce can diced green chilies
  • 8 ounces each, grated cheddar cheese and monterey jack cheese
  • 2 tomatoes, sliced

Sauce

  • 2 cups sour cream
  • 2 tablespoons parsley
  • 2 tablespoons diced green pepper
  • 1 teaspoon garlic salt
  • 2 teaspoons chopped onion

Instructions

  1. Spread rice over bottom of casserole dish. Spread a thin layer of the sauce over the rice. 

  2.  Next, spread 1/2 of the cheese over the rice and sauce. 

  3. Add a layer of zucchini, then sauce and then cheese. Bake about 40 minutes at 350 degrees. Casserole should be bubbly and lightly browned.

Spinach Casserole Recipe

Spinach Casserole Recipe

Ingredients

  • 3 packages frozen spinach, cooked according to package directions
  • 2 eggs
  • 2 cups milk
  • 1 1/2 cup shredded provolone cheese
  • 2/3 cup bread crumbs
  • 1 teaspoon salt

Instructions

  1. Beat eggs. Add milk and salt. Mix.

  2. Stir in cooled spinach, bread crumbs and half of the cheese. Pour into greased casserole dish. (I like to melt butter in the casserole dish).

  3. Sprinkle remaining cheese on top. Bake at 375 for about 30 minutes.

Spinach Souffle Recipe

Spinach Souffle Recipe

Ingredients

  • 3 10 ounce packages frozen spinach
  • 1/2 cup bread crumbs
  • 6 tablespoons butter or margarine
  • 3 tablespoons flour
  • 1 1/2 medium sized onions, chopped fine
  • 1 1/2 cups milk
  • 6 eggs, separated
  • salt and pepper to taste

Instructions

  1. Cook spinach, according to package directions. 

  2. Combine spinach, bread crumbs, butter, flour, onion and milk in a mixing bowl. 

  3. Beat egg whites on high speed until stiff. Gently fols whites into spinach mixture. 

  4. Add a few of the egg yolks and salt and pepper to taste. Pour into 9x11 casserole dish. Bake at 350 degrees for 1 hour.
