Spinach Souffle Recipe
- 3 10 ounce packages frozen spinach
- 1/2 cup bread crumbs
- 6 tablespoons butter or margarine
- 3 tablespoons flour
- 1 1/2 medium sized onions, chopped fine
- 1 1/2 cups milk
- 6 eggs, separated
- salt and pepper to taste
Cook spinach, according to package directions.
Combine spinach, bread crumbs, butter, flour, onion and milk in a mixing bowl.
Beat egg whites on high speed until stiff. Gently fols whites into spinach mixture.
Add a few of the egg yolks and salt and pepper to taste. Pour into 9x11 casserole dish. Bake at 350 degrees for 1 hour.
