Cranberry-Cherry Jell-O Salad Recipe

Ingredients

  • 1 package cranberries, ground
  • 4 packages cherry jell-o
  • 1 cup crushed pineapple
  • 1 cup mandarin oranges
  • 2 cups sugar
  • 1/2 cup walnuts, chopped

Instructions

  1. Prepare jell-o according to package directions.

  2. Add the sugar, fruit and nuts to jello and refrigerate until it begins to jell. 

  3. Then mix and pour into mold. Refrigerate until jelled.

Roast Potato Salad Recipe

Roast Potato Salad Recipe

Ingredients

  • 1 pound new potatoes
  • 6 tablespoons olive oil
  • 1 garlic clove, crushed
  • 12 cherry tomatoes, halved
  • 1/2 cucumber, unpeeled and diced
  • 1 orange bell pepper, cored, seeded and diced
  • 4 scallions, thinly sliced
  • 3 tablespoons fresh parsley leaves
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sugar

Instructions

  1. Preheat the oven to 400 degrees. Spread the potatoes in a roasting pan. Combine 4 tablespoons of the olive oil with the garlic, salt and pepper and drizzle over the potatoes. Roast about 45 minutes, turning once or twice during cooking.

  2. With the remaining oil, mix with the vinegar, sugar and parsley.

  3. Allow potatoes to cool completely. Put potatoes and vegetables into a salad bowl. Toss lightly with the salad dressing. Cover and chill before serving.

Salmon, Green Bean and Pasta Salad Recipe

Salmon, Green Bean and Pasta Salad Recipe

Ingredients

  • 1 can salmon (6 or 7 ounces)
  • 8 ounces small pasta shells
  • 3/4 cup fresh green beans, cut into 2 inch pieces
  • 2/3 cup finely chopped carrots
  • 1/2 cup cottage cheese, small curd
  • 3 tablespoons plain yogurt
  • 1 1/2 tablespoons lemon juice
  • 1 tablespoon fresh dill
  • 2 teaspoons grated onion
  • 1 teaspoon prepared mustard

Instructions

  1. Cook pasta according to package, add 1/4 teaspoon salt and during the last 3 minutes, add the cut green beans. Drain and run under cold water.

  2. Drain salmon and break into chunks. Combine the pasta, carrots, green beans and salmon in a bowl.

  3. In a food processor, mix together the cottage cheese, yogurt, lemon juice, onion, mustard and dill. You want a smooth sauce. Pour sauce over pasta and chill before serving.

Shrimp, Orange and Cashew Salad Recipe

Ingredients

  • 1 or 2 heads of bibb lettuce, cleaned
  • 1 10 ounce can mandarin oranges, drained (chill before using)
  • 1 medium sized avocado, diced
  • 1 red onion, sliced into rings
  • 1/2 to 1 cup bay shrimp
  • 1/2 cup bean sprouts
  • 1/2 cup chopped cashews

Dressing

  • 6 tablespoons oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • salt and pepper to taste

Instructions

shrimp:

  1. Mix everything except the cashews in a salad bowl.

Dressing:

  1. Mix ingredients and pour over salad when ready to serve. Sprinkle cashews over salad and serve.

Chinese Chicken Salad Recipe

Chinese Chicken Salad Recipe

Ingredients

Salad

  • 1/2 pound chicken breasts cooked and shredded
  • 4 ounces won ton skins, cut in strips and deep fried
  • 1 head lettuce, shredded
  • 4 strands green onion, cut lenghtwise, very fine
  • 2 tablespoons almond slivers, sauteed in butter

Dressing

  • 2 tablespoons white sesame seeds, toasted
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup salad oil
  • 3 tablespoons vinegar
  • 1 teaspoon sesame oil

Instructions

  1. Combine ingredients and shake well. Pour over salad and mix lighlty. Serve immediately.

  2. Note- I often take this to pot lucks. I will put each of the ingredients in a seperate baggie. I'll put the dressing in an old mayonaise jar. When it's time to serve, I throw it all together.
