Carrot and Orange Soup Recipe
- 2 cups broth If you want your soup to be vegetarian use vegetable broth. Otherwise use a clear chicken broth
- 1 pound carrots, grated
- 1 small onion, chopped
- 1 stalk of celery, chopped
- 1 medium potato, chopped
- 1/2 cup orange juice
- 1 orange rind, grated
Pour broth into a soup pot. Simmer the vegetables in the broth until the vegetable are tender, 30-45 minutes.
Remove from stove and add orange juice and orange rind.
Put the soup through the blender or food processor until smooth.
